Happy New Year y’all! Its the first day of 2014 and one of my main goals for this year is to cook more, eat out less and to break some of my kids (and my) very picky eating habits. ** Of course, we will completely ignore the fact that we just returned from a late lunch at White Spot – as that was completely negated by the calories burned while sledding at Seymour right?
As you may have read earlier in the year, I have a both of an aversion to cooking and for grocery shopping. Or, maybe they just go hand in hand because both involve planning and creativity beyond what my mind seems capable of (or interested in). But, I am determined to break this cycle of negativity with baby steps, the first of which was cracking out our Crockpot! Yay!
I think my crockpot might be my new best friend this winter…..a little scrounge in the pantry and outside freezer had uncovered two jars of light butter chicken sauce (yes, an oxymoron I know), some rice, chicken breasts and frozen peas! By gosh, that hits all the food groups me thinks!
So, before we hit the road for Mt Seymour I threw the chicken and sauce into the crock pot and came home to some lovely aromas and a healthy hot home cooked meal. A good first step indeed!
