The World’s Best No Bake Coconut Protein Peanut Butter Snack Bites

I have been going through a big transition of late. I am now solidly in my 40’s and am starting to feel like I can’t take my body or my good health for granted much longer. So, I made a major commitment to myself (and health) a few months back which included hiring a personal trainer, making better nutritional choices and getting my body healed and strong from many years of injury, neglect and having kids.

Of course, one of the biggest changes for me on this journey has been the nutrition piece. Sadly I knew the obvious – I was consuming way too much sugar, processed foods and wine. Sob….

But, so was my family (minus the wine), so as part of this process we are all learning to make better, healthier choices when it comes to nutrition. And believe me this is no easy feat when you have the world’s pickiest almost 9 year old. Kale smoothies, yogurt and most fruits are met with a look of disgust so good thing he LOVES peanut butter!

I do find it challenging to keep myself and my kids energized all day and to combat mid-day snack attacks with something that is both healthy and filling. So with help from my amazing personal trainer and some inspiration from Kraft Canada, I discovered these Coconut Protein Peanut Butter Snack Bites that are yummy, nutritious, filling and sooooo easy to make! The addition of the hemp hearts adds a big protein boost to the peanut butter and the kids won’t even notice they are there because of their crunchy nutty flavour and texture.

Read on to see what the verdict from the world’s pickiest 9 yr old was and an easy to read/print recipe card….

Step One: This recipe so simple. This is ALL you will need!

Step Two: Combine all of the ingredients in a medium bowl until well blended.  The “dough” should be a firm consistency. Pop in the fridge for 20-30 mins to chill.


Step Three: Roll into approx. 20 1-inch balls (about 2 tbsp) and roll the ball in the shaved coconut to finish.



Step Four: Place the balls in the fridge for another 30 mins to fully set. Et voila!!


Step Five: Enjoy!! Suggested serving size is 2 to 3 of the bites represented in the above photo

And you know what, even the world’s pickiest 9 year old gave the snack bites two thumbs up! He insisted that his not have any coconut on the outside but what he didn’t realize that there was coconut inside the Peanut Butter Snack Bite itself – our secret! Since he declined to be on camera he took this lovely action shot of me eating my 2nd snack bite instead. Yum.

Coconut Protein No Bake Peanut Butter Energy Balls

Whip up a batch of these no bake Peanut Butter Energy Balls to keep you healthy and fueled all day long!
Recipe type: Snacks
  • 1 c KRAFT Classic Peanut Butter
  • 1 c Hemp Hearts
  • ½ c Honey
  • ½ c Unsweetened Coconut Shreds
  • 3 tsp Cocoa Powder
  • ¾ c Rolled Oats
  • ½ tsp Cinnamon
  1. Mix nut butter, coconut syrup, cacao powder, cinnamon and salt until combined.
  2. Add coconut and hemp hearts.
  3. Chill the "dough" for 30 mins to make for easier rolling
  4. Roll into 1 inch balls, then roll into coconut to decorate.
  5. Refrigerate for 30 mins before serving.
