Well hello out there all you lazy moms! If you are anything like me, it’s now Sunday night and another week of school lunches looms ahead, and you are likely panicking at the thought of trying to come up with some delicious, yet remotely healthy snacks to put in your little groms lunches this week.
But it’s also late. And you’re tired. And the last thing you want to do is spend an hour in the kitchen baking. Right?!
Lucky for you, I seem to be perfecting the art of “shortcut” cooking, and these super easy Banana muffins are fast to make and pretty darn delicious as well.
So first. Grab a pack of Quaker Low Fat Banana Muffin mix.
Place half of the mix in a bowl, no wait, make that place a quarter in one bowl for one kid and a quarter in yet another bowl for the other kid so that they don’t fight about who gets to stir and scoop and lick the bowl etc.
Add a couple of these gross little numbers for that extra banana taste, moistness and nutrition. Unfortunately this is what most of the bananas in our house look like unless they became smoothie fodder at some point.
Mash and mix. Add enough water for the batter to be thick-ish yet still easily scoopable.
Add some chocolate chips or nuts or whatever your little heart desires and bake according to package insructions. We here at Casa Nielsen like mini muffins and those bad boys only take about 8-10 minutes to cook!
And voila. Super yummy litle nuggets of goodness that you can easily freeze for next week when you are too lazy to even bake these 🙂
