It’s not easy being a mom these days. Most of us are raising kids, running businesses, running (or running to) soccer practices and running our homes (as best we can!). Trying to find time for things like exercise, self-care, eating well and spending some QT with our girlfriends seems all too difficult.
|So what is a modern mompreneur to do with too little time and too much to do? I decided to call up a girlfriend for a delicious one hour power lunch at Wendy’s so we could chat about a) business b) our kids c) our husbands d) alternative health therapies e) organic farming and oh yeah f) eat some delicious fresh salads (and fries!) and still have time to pound out work deadlines, buy groceries and pick up he our kids from school. But before I introduce you to Jessica, check out these cool facts about Wendy’s salads….|
|Now, i’d like to introduce you to Jessica. Jessica is a social media and digital marketing maven who happens to own her own digital agency, homeschools, runs a farm and has two little boys just like me. We live about 1km apart but haven’t seen eachother in months because our schedules are just that crazy. That’s the reality of being a modern mom. Jessica is very particular about eating fresh food, and she was pleasantly surprised at the quality and freshness of the ingredients in her BBQ Ranch Chicken Salad.We were both pleasantly surprised by the amount of all white meat chicken breast that was served hot and fresh on top of the salad – just like we would make at home on the BBQ! The salad including other amazing ingredients like fire roasted corn, freshly diced tomatoes, sharp shredded cheddar cheese, and applewood smoked bacon (YUM!). The BBQ Ranch dressing was amazing and a quick check of the ingredients showed us real buttermilk, parmesan cheese, ancho chili peppers, honey and brown sugar. Love!|
|As tempting as the Taco Supremo salad looked, I decided to try the Asian Cashew Chicken salad. Can you believe that this entire salad, including the fire roasted edamame, freshly grilled chicken, Asian Chili Vinagrette dressing, fresh red peppers, cucumbers and 11 different kinds of greens clocks in at under 370 calories! That justified an upgrade of my Wendy’s Sea Salted Fries to a medium (please try to ignore the ketchup stains on my shirt, I think they got strategically covered in the photos!)The salad was crunchy and sweet with a nice spicy kick. Notes of ginger and fruit from the dressing complemented all the fresh flavours sooooo well. I will definitely be having this salad again!|
