How pinterest will save my sanity and appetite

 

Many of those who know me well know that I have never been one for cooking. In fact, i’d go so far to say I kinda of strongly dislike it (despite the fact I have a gorgeous large kitchen that is so going to waste on a shlub like me).

Anyways, back in my good old single days I would just throw together whatever the heck I felt like, whenever the heck I felt like eating. In fact, even today I would still be perfectly happy to eat an easy dinner rotation of a) cereal b) toast and eggs or c) spaghetti pretty much every single week but I have these two little boys who seem to want to eat something different every. single. night. at 5:30 (or earlier). Sigh.

So, i’ve tried, i’ve really really tried over the years to expand my kids palettes and get more creative in the kitchen but with a chronic gagger/hater of pretty much everything and another kid who loves a particular meal one week then despises it the next I have seriously given up.

Did I also mention that I am a life long hater of red meat, and don’t even get me started on chicken skin or bones. Shivers.

So, as a last ditch effort to save my sanity (and appetite) and not allow my family to die of malnutrition I have decided to start a 30 day Pinterest cooking challenge. I have been pinning a bunch of yummy looking meals on my “mains.” Pinterest board and plan to select one of these pins every night for 30 days (except for fridays – no one should have to cook on fridays amiright?)

    This…intimidates me. I, too, struggle with cooking. AND…my kids are vegetarians and I AM NOT. How did that even happen?! This seems like a great goal, though…I shall watch you go through it, see how it goes, then maybe leap. HA! You do the hard work first.
